Work Lunches! - NussieT - 02-21-2010 I need a little help! My husband is complaining about the lunches I've been sending with him to work. I need some ideas for work lunches that are quick and simple. Some quick little facts about my husband... 1) He works at a highway tractor shop three days a week for 12 hours shifts. He gets 5 breaks including his lunch. 2) He eats A LOT! He eats like Derick, if not more. 3) He is a very healthy eater, here is the hard part, he can't eat too many veggies or fruit in one weekend because it upsets his colitis. It also means he won't eat out nor will he eat processed foods like chef boyardee or frozen lunches 4) They only have a microwave at his location, no can opener, no toaster oven or anything. I usually make up 2 sandwiches, a baggie of carrots, maybe a snack pack, a yogurt, cereal/granola bar, sometimes a pear or an applesauce. A nice variety of stuff. For myself, I usually have a yogurt, a baggie of Spec K cinnamon (to munch on), An orange (or apple or whatever fruit), a baggie of a veggie (usually carrots), then either leftovers or a sandwich (I get tired of deli meats fast, so sometimes I'll make up sloppy joes), or soup or whatever... Tonight I will be making chicken chow mein to eat for the rest of the week (minus Friday). Would leftovers be an option? You could make up extra and then put that in his lunch. Maybe a casserole that would only take a couple minutes to warm up.
